Cucumber Raita
This raita is rather cooling to the body and
the aroma of the roasted cumin seeds is very appetizing.
Ingredients:
1 small cucumber, skin removed
1 tsp cumin seeds
125g/5oz thickset natural yoghurt
1/4 tsp salt
1/4 tsp paprika
To make Cucumber Raita
Skin and chop the cucumber and mix with roasted
cumin seeds paprika, salt and thick beaten yoghurt.
Put into a serving dish and use it as an accompaniment
for Meat Vindaloo or Pilau or Biriyani.
