Lemon Rice
Ingredients:
Raw rice - 1 cup
Lemon - 2 medium sized
Salt - as required
Turmeric powder - 1/2 tsp
Red chilles – 2
Oil - 1½ Tblsp
Cut ginger - 1 tsp
Asafoetida - 1 tsp
Finely cut curry leaves - 1 Tblsp
For Seasoning
Mustard seeds - 1/2 tsp
Black gram dhal - 1 tsp
Bengal gram dhal - 1 tsp
Broken cashew nuts - 2 tsps
To make Lemon Rice
Cook rice and allow it to cool in a broad basin.
Add turmeric powder on top of rice when it
is still hot.
Heat oil and fry the seasonings, add cut red
chillies and fry for a minute.
Pour over cooled rice with enough salt.
Squeeze lemon juice and mix well by adding
ginger and asafoetida.
Garnish with curry leaves.
